Typical products of our region and traditional dishes
The lard - this meat, which has the same color of the marble and boasts the IGP brand is the symbol of the ancient village of Colonnata, that lies at the edge of the marble quarries. The delicacy of this meat is in its maturation that occurs in marble basins, which maintain the right humidity.
Pesto - is a typical seasoning widely used in the local cuisine. Its main ingredient is basil to which ingredients like the extra virgin olive oil, parmesan cheese, pecorino cheese, garlic, pine nuts, salt are added. It is the right sauce for testaroli, typical pasta of Lunigiana, or homemade noodles.
Baccalà marinato – the floured codfish pieces are fried in extra virgin olive oil then laid on a sauce of garlic, rosemary, pepper, vinegar and tomato sauce. An old receipt of Carrara.
Tordelli alla Carrarina - homemade ravioli with minced meat, mortadella, sausage, beets, eggs, parmesan cheese, onion, parsley, thyme and nutmeg served with meat sauce.
Muscoli ripieni alla Carrarina - mussels stuffed with sausage, mortadella, eggs, bread crumbs, parmesan cheese and served with a tomato sauce of parsley, garlic and chilli.

Candia dei Colli Apuani - the production area: the municipalities of Carrara, Massa, Montignoso:
• Vermentino Toscana IGT (Vermentino grape) indicated with seafood, white meat.
• Candia DOC Rosso (basic varieties of grapes like Sangiovese, Merlot, Massaretta) indicated with meats, cheeses, soups, fish soup.
Colli di Luni - production area: municipalities of Fosdinovo, Aulla, Podenzana:
• Vermentino (Vermentino grape base) indicated with fish appetizers, main dishes of fish, fried fish, shell fish.
• Red (basic varieties Sangiovese, Canaiolo, Ciliegiolo) for soups, grilled meats and cheeses.
